The versatile Basic Cream Soup Mix is used in this recipe; it should be on everyone’s pantry shelf because it can be used for so many things. The casserole also includes ham, scrambled eggs, fresh mushrooms, and cheese. Yum!

2 cups water
1 cup Basic Cream Soup Mix
2 cups shredded sharp cheddar cheese, divided

1/4 cup butter
8 ounces lean ham, cut into 1/4" dice
1/2 pound sliced mushrooms
4 chopped green onion, (reserve a few green pieces for garnish)

12 eggs, blended

1 cup dry bread crumbs

  1. Preheat oven to 350°.
  2. Spray an 8" x 12" shallow baking dish with non-stick spray.
  3. Cheese Sauce: Whisk together the water and cream soup mix in a microwave-safe container; microwave 3 minutes; whisk until smooth, and microwave an additional one to 2 minutes or until thickened.( Alternately cook the mixture on top of the stove over medium heat).
  4. Stir in 1 cup of the sharp cheddar cheese and continue stirring until smooth.
  5. Melt the butter in a large skillet; add the ham and mushrooms.
  6. Stir over medium heat until the onions are tender; add the green onions and sauté until they begin to soften.
  7. Add the eggs and using a rubber spatula, stir every minute or two until the eggs are just barely set and soft scrambled (they will finish cooking in the oven).
  8. Transfer the mixture to the prepared baking dish; pour the cheese sauce evenly over the egg mixture.
  9. Sprinkle with the remaining cheese, and sprinkle with the breadcrumbs.
  10. Bake 35-45 minutes or until bubbly.
  11. Sprinkle with the reserved green onions and serve.
