Easy Microwave Scrambled Eggs Recipe
I adore scrambled eggs. They're tasty, full of protein, and healthy. Unfortunately they can also traditionally involve having a stovetop, pan, and some time. Here's the quick and easy microwave version!

Easy Microwave Scrambled Eggs Recipe

You need a microwave-safe cup, to start with. A mug is fine. Keep in mind that it's going to hold your scrambled eggs in it so it shouldn't be too tiny!

Other than that you'll need:

2 medium-sized eggs
3 Tbsp milk (more or less to taste)
oil (to grease the mug)

Start by applying a light layer of oil to the inside of your mug. This will help the egg to not stick to it. If you plan on cooking this regularly you might get yourself one of those spray-on oil containers.

Now, crack the two eggs. Put just the insides of the egg into the mug. Never put a whole egg into a microwave - they will explode! For that matter, make sure you swirl up the eggs enough that the yolks break open. Even a solid yolk can explode in a microwave.

Add in the milk. Some people like their eggs very runny. Others prefer them dry. You probably know how you like your scrambled eggs. Here's an opportunity to play with different styles and see what you think!

Now add a dash of salt and pepper. Mix it in. You can always add more later if you decide you want to.

Start off microwaving it for 30 seconds. Take a peek at it. Mix it in a bit more. Now microwave in 10 second increments until it's the consistency you enjoy. Again, some people like their eggs very runny and others prefer them rock solid. It's wholly up to you, how you like your eggs.

You can add in all sorts of things to your eggs to top them off! I adore sprinkling on cheese or bits of chopped tomatoes. Maybe add in some chives - those go well with eggs. My boyfriend is a wild man and likes things like hot sauce. You can add in mushrooms. Bits of ham. Leftover corn.
